Since arriving in the UK JC has struggled to find a bacon that was rich in flavour and did not shrink to tiny bits when cooked and maintained its flavour, as a result and months of sampling he has come up with a Bacon that is just unbelievably good ! Only the best flavours go into this traditional authentic recipe, So why not add rum and maple syrup...
Never rushed this bacon gets cured for around 8 days, rested for a day or 2 then smoked for a minimum of 24 hrs then rested for a couple days again and finally sliced not too thinly for your enjoyment !
